Redefining "Fast Food"

Great food, fast!

For me, the idea of "fast food" has shifted from the stereotypical drive-thru establishment to a new way of eating. After all, my house often resembles a "drive-thru" with teenagers coming and going nonstop and helping themselves to whatever is in the refrigerator or pantry, as well as myself and my husband with crazy schedules where many times we pass each other driving down our street yelling messages at each other! Therefore, fast food in my house means, where can I get some food, FAST! If this is the case in your life, I invite you to think healthy, which I know can be challenging. This time of year, I find it just takes some creativity and openness. Here are some suggestions:

1. SALSA is your friend! Make a big batch of salsa when you have time, keep it on hand in the refrigerator and you can use it as a staple for a quick snack or meal.  Toss it on whole wheat tortilla with some low-fat cheese, heat it up and you’ve got a great quesadilla. Kids will sit and eat chips and salsa all day long for a snack if you just put it out there, plus it’s so healthy they won’t even notice! Make a salad; throw some leftover chicken on it, refried beans, salsa and BAM! You got yourself and quick, hearty meal. 2. It’s summertime, so the lighter the better. I know many people expect one hearty meal a day, but really, this is more habit than necessity. Especially in the summer, the winter comfort foods go out the window. (I’m full of seasonal phrasing, aren't I?) So think easy, light, fast food for your house. Instead of meat and potatoes, why not fish (it cooks/grills up quick) and fresh vegetables? Easy, quick and healthy!

3. Don’t forget all that fresh fruit available. Keep an abundance of fruit washed and cooled, sliced and ready to eat and I promise you it will disappear without you having to hear, "What can I have to snack on?" Frozen grapes, sliced watermelon or sweet peaches can be refreshing, filling and the best "fast food" in the house.
