Five Ways to Turn a Salad into a Complete Lunch

Check lunch off your to-do list before you arrive at work.  Pack a big bowl and a few extra ingredients from home; take a spin through the drive thru, order your morning coffee or tea with a side salad and dressing to go (they are available all day long).  When lunchtime arrives, just slice and dice your extra ingredients (with the handy plastic knife), toss with dressing and lunch is served.

Chef’s salad – From the fridge, grab a piece of string cheese, a few slices of your favorite lunchmeat and a handful of grape tomatoes.  At the drive-thru chose McDonald’s Newman’s Own light Italian dressing or fat free honey mustard from Chick-fil-A.

Omega-3 friendly - Pick a pouch of salmon from the pantry.  Add a small can of chickpeas and some sweet or green onion.  Try Burger King’s creamy red jalapeño or avocado ranch dressing.

Let’s do leftovers - Pack last night’s macaroni, meat (roasted chicken or London broil are favorites) and the veggie of the day.  Be decadent and order Wendy’s creamy Caesar or Chick-fil-A’s blue cheese dressing

A Mediterranean touch - If you love legumes there is nothing better than lentils, feta cheese with green or red peppers.  Dress with a low fat balsamic vinaigrette from McDonalds or the pomegranate vinaigrette from Burger King.

Protein packed- Add a hardboiled egg, a can of tuna and olives.  Serve with Kens ranch from Wendy’s or top with my favorite, Chick-fil-A sauce.  The Chick-fil-A sauce will make you want to lick the bowl!
