Oats are touted to be heart-healthy and cholesterol lowering, but not everyone enjoys a bowl of oatmeal or oat-based cereal for breakfast.  If your taste runs toward muffins, pancakes and waffles, there is an easy way to add whole grain oats.  Break out your favorite recipe and replace 50% of the all-purpose flour with ground oatmeal.

For every ½ cup of white flour replaced with oat flour, total fiber increases by four grams, including two of soluble fiber.  You can find oat flour in the baking sections of most grocery stores or you can place ½ cup of old fashioned oats in a coffee grinder and process for 10 seconds.    One half-cup of old fashioned oats yields a generous ½ cup of flour.  Keep any leftover ground flour in a sealed container and use as needed.  The flour can be added to meatballs or used to bread chicken.  It’s a simple way to add a touch of whole grains.

Strawberry Pancakes
3/4 cup all-purpose flour
½ cup oatmeal flour
¼ cup sugar
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon cardamom (if it’s not in your spice rack, use cinnamon or ginger)
¾ cup milk
½- ¾ cup strawberries, chopped
1 egg
1 teaspoon vanilla

  1. Into a large bowl, sift the flours, sugar, baking powder, salt and cardamom.  Stir in the milk, strawberries, egg and vanilla, mix until just combined. 
  2. Spray a griddle with cooking spray.  Heat the griddle over medium heat.  Spoon the batter onto the hot griddle and cook each side for about 2 minutes.  Serve warm with syrup or dusted with powdered sugar.
