Family Dinner Night and Savings at Safeway

Celebrate "Eat Dinner with your Family Day".

Monday Sept 26th is Eat Dinner with your Family Day.  Hopefully we are all eating dinner more than once a year with our loved ones.  School nights can be tricky so I’ve included my spaghetti pie recipe that can be made over the weekend and baked just before dinnertime. 

This is a great recipe for all ages and an easy one for the kids to assemble.  They can crack and beat the egg.  Stir the butter into the hot spaghetti and form the crust.  They can generously top the pie with cheese and pepperoni, just make sure to have a little extra because they are bound to sneak a few bites.

4 ounces spaghetti, cooked and still hot

1 tablespoon butter

1 egg

2 tablespoons Parmesan cheese

1 ½ cups ricotta cheese or cottage cheese

1 cup prepared spaghetti sauce

1 cup shredded mozzarella cheese

2 ounces pepperoni, turkey or veggie

Preheat the oven to 350 degrees.  Butter an 8 or 9-inch pie pan. 

To assemble the pie: In a bowl, add the butter to the hot spaghetti.  Mix until combine.  In a small bowl, combine the egg and the Parmesan cheese.  Add the egg mixture to the spaghetti and mix well.  With a fork, pat the spaghetti into the greased pie plate (this forms the crust).  Spread the ricotta cheese over the crust.  Spread the sauce over the ricotta cheese.  Sprinkle on the mozzarella and top with the pepperoni.

Bake, uncovered for 20 minutes.  Let stand for 10 minutes before serving.  Serves 4.

Safeway has $5 coupon (available at the customer service desk) off a purchase of $15 frozen food items.  Not a Safeway shopper?  You can still use the coupon as a “competitor coupon” at Giant and Harris Teeter.  I was able to get $22 worth of frozen food at Giant for $9.50.  I had an additional $5 in paper coupons and Giant was offering an automatic $2.50 off for purchasing certain frozen products.  I was able to restock the chocolate chip waffles and Phillip’s crab soup was on sale for $3.99 minus a $2 coupon.  You can’t make crab soup for that price!
