Recipe Day: Crock Pot Asian Ribs

Try this easy hands-off dish for those hot summer days.

This is another one of my go to summer dishes when I don't feel like cooking.  I normally use country style pork ribs, but have also used beef ribs as well.  Because you are cooking these over low heat all day, the result is tender fall off the bone meat, and not the usual crispy coating you usually get when you toss them on the grill.  The "gravy" it makes during the slow cooking process goes well with rice.

Crock Pot Asian Ribs

  • 3 - 4 pounds of country style pork ribs (boneless or with bones)
  • 1/2 cup reduced sodium soy sauce
  • 1 Tablespoon Toasted Sesame Oil
  • 1/2 cup sliced onion
  • 4 garlic cloves cut into thin slices
  • 1/4 cup honey
  • 1 tablespoon fresh ginger root, peeled and chopped fine
  • 1 teaspoon pepper
  • 1/2 teaspoon hot pepper flakes

Optional Garnish:  1/2 cup chopped fresh cilantro, 1/2 cup green onion

Place ribs into crock pot--I usually use my larger crock pot for this dish.  Mix remaining ingredients in a medium bowl and mix together.  Pour over top the ribs.  Place crock pot on low and simmer for 8 - 9 hours.  I normally serve with steamed broccoli and rice.  If desired, sprinkle with fresh cilantro and green onion.
